Rabo de Galo

COCKTAIL INGREDIENTS:
- 60 ml Cachaca
- 15 ml Cynar
- 15 ml Sweet Vermouth
- 2 dashes of Orange Bitters (Optional)

GARNISH:
- Dehydrated Orange Wheel
- Lime Twist

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail glass.
• Add a large ice cube.
• Briefly stir to combine and chill.
• Garnish with a dehydrated orange wheel and a lime twist.

 

Cocktail author: not sure who came up with this cocktail, but it is one of the most popular cocktails in Brazil.

Rabo de Galo is a cocktail as strong in alcohol as it is in flavor. A combination of grassy notes of Cachaca, bitter artichoke sweetness of Cynar and sweet herbal notes of sweet vermouth finished off by a couple of dashes of orange bitters. While the proportion of cachaca compared to other ingredients suggest that cocktail would be rather dry, it is not entirely so. Addition of Cynar and Sweet Vermouth provide a little bit of sweetness and bitterness perfectly balancing the dryness without overdoing it. Great drink to make if you are not looking for anything too sweet or too dry. Rabo de Galo is a great middle ground.

According to my research Rabo de Galo means “rooster’s tail” in Portuguese. To illustrate this, I have decided to play around a bit with the garnish. I have chosen dehydrated orange wheel for its aromatic qualities and pinning an ornate lime twist to it.
