COCKTAIL INGREDIENTS:
- 45 ml Dark Jamaican Rum
- 22,5 ml Light Puerto Rican Rum
- 15 ml Velvet Falernum
- 15 ml Cointreau
- 15 ml Fresh Lime Juice
- 6 drops of Pernod (I used Absinthe)
- 1 dash of Angostura Bitters

GARNISH:
- Sprig of Mint
- Cherry
- Lime Wheel

INSTRUCTIONS:
• Combine all of the ingredients in a blender. (Alternatively use cocktail shaker.)
• Add ice and flash blend. (Alternatively shake with crushed ice.)
• Pour the contents into a tiki glass.
• Top with crushed ice if necessary.
• Garnish with a sprig of mint, lime wheel and a cherry.

What can be better in the middle of the summer, than a true tiki classic from Don the Beachcomber? Test Pilot is a lovely drink to relax with. Split rum base keeps it light yet funky, falernum and Cointreau contribute sweet and fruity notes, while lime helps to balance the sweetness. Adding a few drops of Pernod and a dash of Angostura, brings some complexity to the drink, seasoning it lightly, so it is just noticeable there, in the background.
