The Cutter

COCKTAIL INGREDIENTS:
- 22,5 ml Bourbon
- 15 ml Rye Whisky
- 22,5 ml Campari
- 15 ml Amaro Ciociaro
(I used Averna with a dash of orange bitters)
- 22,5 ml Fresh Lemon Juice
- 7,5 ml Rich Sugar Cane Syrup
- 1 dash Angostura Bitters
- 1 dash Orange Bitters

GARNISH:
- Twist of Lemon

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with a twist of lemon.

The Cutter is Alec Bales riff on the well-known Paper Plane. Lovely cocktail, with deep taste and refreshing bitter notes that make it suitable for the summer, especially if you prefer a bit stronger drinks. However, since I really wanted to try it, but did not have all the exact ingredients called for in the specs, I took some liberties substituting the choice of amaro to, one of my personal favourites, Averna.

The Cutter uses St. George B&E American as a base spirit. An American whisky made using a blend of rye, corn, barley and wheat. Since getting my hands on this particular bottle was very difficult I used a split base of bourbon and rye whisky, to try and approximate the preferred spirit. Whisky is paired with bitter-sweet Italian Amari for their deep, but refreshing tasting notes. Since I did not have Amaro Ciociaro, I turned to my favourite Averna, for its caramel and citrus notes. It might not be what recipe called for, but it was still very tasty. Lemon juice and sugar cane syrup brings some sour freshness and balance to the drink. Finally, a couple of dashes of bitters will bring the cocktail together and will give it a bit more pep in its step.

The Cutter is a great riff, with a distinctively bitter taste profile and oaky, peppery whisky notes creating a lovely drinking experience. I highly recommend trying it, if you get the chance.
