White Lady

COCKTAIL INGREDIENTS:
- 60 ml Gin
- 30 ml Triple Sec
- 30 ml Fresh Lemon Juice
- 2,5 ml Simple Syrup (half-barspoon)
- 22,5 ml Egg White

GARNISH:
- Lemon Twist

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Dry shake (without ice) to emulsify the egg whites.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Express lemon peel oil on top and garnish with a lemon twist.

White Lady is a true gin classic, invented by the famed bartender Harry MacElhone almost one hundred years ago. When I was listening to Vinepair’s Cocktail College episode with Emily Arseneau about the White Lady, I knew instantly that this will be the next cocktail I am going to make. It is a deceptively simple cocktail, yet many classic cocktails often are and rightfully so. Anyone who ever attempted to create a new cocktail knows, how difficult it is to keep it simple.

White Lady is a crisp, refreshing and zingy cocktail, where every ingredient has an important role to play. Juniper forward London dry gin forms the base of the cocktail, with citrus notes of lemon providing crispy freshness. Sweet orange notes of Triple Sec combine well with the lemon and at the same time together with the simple syrup offsets the sourness. However, I did not adhere to Emily’s recipe 100% and kept true to the original recipe by adding egg white, since I love that texture egg white foam provides. Express some lemon peel oil on top of it and you have a perfect cocktail.
