Fort Tilden Cooler



COCKTAIL INGREDIENTS:
- 30 ml London Dry Gin
(Preferably over 40% ABV)
- 30 ml Fino Sherry
- 22,5 ml Simple Syrup
- 22,5 ml Fresh Lemon Juice
- 3 Dashes of Absinthe
- 60-90 ml Soda Water (Chilled)
GARNISH:
- Grapefruit Peel
- Sprig of Mint
INSTRUCTIONS:
• Chill a highball glass and fill it with ice.
• Combine all of the ingredients except soda water in a cocktail shaker.
• Add ice and give it a brief shake.
• Strain into a prepared cocktail glass.
• Top with chilled soda water.
• Garnish with a sprig of mint and a grapefruit peel.

Tom Collins is a well-known classic cocktail, beloved by people for many decades. Its simple and adaptable recipe suits perfectly for riffing and Fort Tilden Cooler is a great proof of that.
Base of the cocktail is split between the London dry gin and Fino sherry. Gin serves as a nod to the original Tom Collins and brings those familiar strong juniper notes to the mix. Fino sherry adds delicate fruity notes as well as impression of salinity, setting the bright refreshing tone for the cocktail. A few dashes of absinthe and its anise forward flavour lingers in the background without overpowering other ingredients and increases the overall complexity. Rest of the build is pretty straight forward. Fresh lemon juice for that refreshing citrusy tartness with the simple syrup providing the balance and reinforcing individual notes of the cocktail base. Last, but not least, soda water lengthens the cocktail and brings fresh acidic effervescence to the mix.
