COCKTAIL INGREDIENTS:
- 30 ml Bianco Vermouth
- 30 ml Suze
- 15 ml Mezcal
- 45 ml Soda Water (Chilled)
GARNISH:
- Grapefruit Twist
- Sprig of Mint
INSTRUCTIONS:
• Combine all of the ingredients except soda water in a cocktail glass.
• Give it a stir to combine.
• Add ice.
• Top with chilled soda water.
• Express grapefruit peel oils over the top.
• Garnish with a grapefruit twist and a sprig of mint.

With summer being just over a month away, it is about time to look for simple and refreshing cocktails, for hopefully delightful warm and sunny weather ahead. Fumata Bianca is a tasty cocktail with refreshing bitter notes and not overly full of alcohol, thus making it a perfect choice for warm weather.
Overall taste profile of the cocktail is dominated by bitter earthy notes of Suze and smoky vegetal flavours of the mezcal – a truly delicious combination. Bianco Vermouth supports the first two with slightly sweet herbal tones reminiscent of a drop of honey. It somewhat blends into the background, but provides the essential balance. Effervescence of soda water give the drink a new dimension while at the same time lengthening the cocktail. Final touch of grapefruit peel oils expands on the aromatics subtly catching your attention and inviting to take a sip.
