Yesterday, Today and Amaro

COCKTAIL INGREDIENTS:
- 60 ml Rye Whiskey
- 15 ml Cynar
- 7,5 ml Amaro Averna
- 7,5 ml Bénédictine
- Lemon Peel Oils
(Expressed over the top)

GARNISH:
- Lemon Twist
- Dried Rose Bud

INSTRUCTIONS:
• Combine all of the ingredients in a mixing glass.
• Add ice and stir for 30-45 sec. or approx. 60 revolutions.
• Strain into a chilled cocktail glass.
• Express lemon peel oils over the top.
• Garnish with a lemon twist and a dried rose bud.

Lately I have felt a craving for some deliciously bitter cocktails filled with Italian amari. So, I looked through my notes and found this booze filled libation, that I have come across some time ago. Finally, it was the perfect time to taste it, even though it is more suitable for colder times of the year.

Rye whiskey is used as a base for the cocktail with distinct notes of black pepper and oak, which are further supported by subtle fruity undertones. It is strong and bold, a perfect pairing with amari, which can sometimes be dominating. Cynar is the first amaro bringing balanced bitter-sweet herbal flavours, with hints of caramel and cinnamon. Averna adds further chocolate notes with subtle additions of cola and aniseed. Benedictine expands the complexity with well-defined herbaceousness and honey sweetness. Combined these ingredients steer the cocktail in a sweet direction which is then dried out by the strong base spirit. Lemon peel oils add that final refreshingly fragrant touch without introducing tartness into the mix.

All in all, Yesterday Today and Amaro is a remarkably complex and boozy cocktail. Perfect to relax with in front of a roaring fireplace or simply to satisfy a craving for a sophisticated bitter-sweet drink.
