Pineapple Gum Syrup

 

INGREDIENTS:
- 400 ml Fresh Pineapple Juice
- 340 g Sugar
- 17 g Gum Arabic

PREPARATION:

• Sift gum arabic into the sugar and combine.
• Heat the pineapple juice up to 80 °C.
• Slowly add the sugar to the juice while stirring to avoid lumps until fully dissolved.
• Strain the syrup through a cheesecloth or a nut milk bag.
• Keep the syrup in the fridge overnight.
• Remove the white film from the surface of the syrup.
• Pour the contents into a sterilized container and store in the fridge for up to 4 weeks.
