Blackbeard's Ghost
COCKTAIL INGREDIENTS:
- 30 ml Column Still Aged Rum
(Preferably Puerto Rican)
- 15 ml Demerara Rum
- 15 ml Apricot Liqueur
- 15 ml Velvet Falernum
- 30 ml Fresh Orange Juice
- 15 ml Fresh Lemon Juice
- 15 ml Fresh Lime Juice
- 15 ml Rich Demerara Syrup
- 2 Dashes Angostura Bitters
GARNISH:
- Pineapple Spears
- Sprig of Mint
- Dehydrated Lime Wheel
INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker. | Alternatively use a blender tin.
• Add a small amount of crushed ice and shake briefly, but energetically. | Alternatively flash blend with the full amount of crushed ice.
• Strain over fresh crushed ice into a cocktail glass. | Alternatively pour the contents into a cocktail glass.
• Garnish with a dehydrated lime wheel, a sprig of mint and a pineapple spears.

What better way to start The New Year, than with a tasty tiki drink, that can instantly transport you to a tropical paradise, where all your troubles simply disappear? Basically, this type of cocktail can brighten your evening in the same way we hope The New Year will be brighter than the old, even if only for a moment.
The list of ingredients and individual tasting notes in this cocktail is rather long so let’s get started. Base of the cocktail is split between aged Puerto Rican rum and demerara rum. This creates a rich rum base with notes of vanilla, caramel, toffee and tropical fruit. Deep molasses flavour of demerara rum is then further enriched by the syrup and paired with a bright, sweet falernum that is full of tropical spices. A touch of apricot liqueur brings a distinct fruitiness to the mix that is noticeable, but does not overtake the entire cocktail. A trinity of citrus: lemon, lime and orange - brings the balancing tartness as well as a touch of citrus aroma. Last, but not least, the bitters seasons the cocktail with delicious spice mix teasing out the more obscure notes of the other ingredients, especially rum.
All in all, Balckbeard’s Ghost is a fun and delicious tiki drink. Yes, it is sweet, requires a lot of ingredients, but it is incredibly tasty, comforting and playful. Perfect drink to greet The New Year with.
