Blackberry Peach Sour

COCKTAIL INGREDIENTS:
- 60 ml Blackberry Starka
(Preferably Stumbras Wildside)
- 15 ml Peach Liqueur
- 30 ml Fresh Lemon Juice
- 15 ml Simple Syrup
- 22,5 ml Egg White

GARNISH:
- Blackberry
- Flower

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Dry shake to emulsify the egg whites.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with a skewered blackberry and a flower.

Recently I have came across a new version of starka from my home country, which has been enriched with wild blackberries. I was immediately intrigued and bought myself a bottle. As usual I started with a quick sour cocktail test and the idea was born –Blackberry Peach Sour.

Base of the cocktail is formed by aforementioned Starka with Wild Blackberries. Matured spirit with subtle notes of oak and apple which are then further enriched by the sweetness and fruitiness of blackberries. I then expanded on the fruity note with a touch of stone fruit in the form of peach liqueur. From here on, I followed a pretty straight forward sour build, in order to keep things simple and maintain the delicious fruity fusion created by the first two ingredients. Refreshing tartness, the staple, of a true sour is brought by a healthy dose of fragrant lemon juice. A touch of simple syrup provides the overall balance, letting the flavours pop just a bit more. Last but not least, egg whites bring that creamy decadent texture sours a known and loved for.

Blackberry Peach Sour is my take on a sour style cocktail with dessert like vibes and a unique spirit. Great for garden parties or to relax with after a long and hard day.
