Big Bamboo



COCKTAIL INGREDIENTS:
- 30 ml Aged Cuban Rum
- 15 ml Dark Jamaican Rum
- 15 ml Passionfruit Syrup
- 15 ml Fresh White Grapefruit Juice
- 15 ml Fresh Orange Juice
- 15 ml Fresh Lime Juice
- 2 Dashes Angostura Bitters
- 115 g Crushed Ice
GARNISH:
- Edible Flower
- Sprig of Mint
- Dehydrated White Grapefruit
INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker. | Alternatively use a blender tin.
• Add a small amount of crushed ice and shake briefly, but energetically. | Alternatively flash blend with the full amount of crushed ice.
• Strain over fresh crushed ice into a cocktail glass. | Alternatively pour the contents into a cocktail glass.
• Garnish with a dehydrated white grapefruit wheel, a sprig of mint and an edible flower.

For those who have been following my cocktail journey it will not be a surprise, that I love a good tiki cocktail. Rum forward, fruity and playful drinks, suit their escapist purpose perfectly. Big Bamboo is certainly one of those.
True to a tiki fashion cocktail base is formed by a blend of rums. Aged Cuban rum brings numerous spice notes to the drink, while at the same time drying out the cocktail base in order to help balance the fruity nature of the cocktail. Jamaican rum adds funky sweet texture with notes of overripe banana, for which it is known and loved for. Passionfruit syrup takes the Big Bamboo in a fruity direction with those lovely sweet and fragrant tones. Orange juice lengthens the cocktail with citrusy sweetness without increasing the proof of the drink. Combination of white grapefruit and lime juices balances the cocktail with delicious tartness while bitter notes of the grapefruit subtly increase the complexity. A touch of Angostura bitters brings the ingredients together nicely finishing the drink.
All in all, Big Bamboo is a cocktail full of tropical flavours. At first, it will be sweet and fruity, but be sure, there is a lot to unpack there and complexity will slowly reveal itself (provided you do not let it sit for too long). So, give it a go and start the spring with a tasty tropical drink.
