COCKTAIL INGREDIENTS:
- 30 ml Aged Rum
- 15 ml Overproof Rum
- 15 ml Averna Amaro
- 22,5 ml Fresh Lime Juice
- 22,5 ml Orgeat

GARNISH:
- Lime Wheel.
- Lime Twist.
- Grated Nutmeg

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add a single ice cube and shake energetically.
• Strain over fresh crushed ice into a cocktail glass.
• Garnish with a lime wheel, lime twist and some freshly grated nutmeg.

Recently I have been looking for a new rum-based cocktail to try and came across this Meaghan Dorman’s creation and it was delicious. I had to improvise and make some substitutions with Plantation 5-year-old rum and O.F.T.D. (instead of Jamaican rums) and it seems to have worked well enough.

For me Across the Pacific is defined by the addition of Amaro Averna, it really makes this cocktail into what it is. Bittersweet notes of Amaro brings the rest of the ingredients together and gives the cocktail a little bit of an unusual twist for a tropical rum cocktail. Amaro together with the lime juice balances out the sweeter notes of rum and especially orgeat, but does not take too much attention away from the rum, it is being noticeable every step of the way. All in all, it is a fantastic cocktail, a middle ground between the Mediterranean and the Caribbean. It is a joy to drink.
