Cocktail author: Martin Cate (Smuggler’s Cove cocktail book).

This recipe comes from Martin Cate, creator of the Smuggler’s Cove, so you know this must be one hell of the cocktail.

Rhum Agricole lays the foundation for the cocktail with vegetal and grassy notes. Typical to rum cocktails tartness component comes from the lime juice, which harmoniously pairs with the rhum. Sweet balance is provided by the Licor 43 and its vanilla notes. Guava soda contributes a fruity twist, with strawberry and pear like qualities. Finishing touch of Angostura bitters adds a little spice bringing all of the ingredients together into a tasty drink.

Rhum Agricole is a lovely choice for base spirit, which should be utilized more in cocktails. I’m not sure why it is, that rhum agricole is not more often encountered in drinks; perhaps due to its remote locality, or certain taste that is less familiar to us, either case there is plenty of untapped potential here. So, if you are looking to get familiar with French style rums, this could be a great starting point.
