Bergamot Gin Fizz

COCKTAIL INGREDIENTS:
- 60 ml Gin
- 30 ml Bergamot Simple Syrup
- 15 ml Bergamot Juice
- 22,5 ml Egg White
- 60 ml Soda Water (Chilled)

GARNISH:
- Bergamot Twist

INSTRUCTIONS:
• Combine all of the ingredients except soda water in a cocktail shaker.
• Dry shake (without ice) to emulsify the egg whites.
• Add one-two ice cubes and shake until fully dissolved.
• Pour the contents into a chilled cocktail glass and let it set for a minute or two in the fridge, until the foam fully forms.
• Top up with soda water to raise the foam. (For better result you can make hole with a straw to pour the soda water through or pour it along the bar spoon in order not to ruin the foam.)
• Garnish with a twist of bergamot.

Recently I have been playing around with some bergamots, making syrups, liqueurs and bitters when I came across this recipe for Bergamot Gin Fizz. Since I’m a huge fan of fizz style cocktails, I could not resist trying it as soon as possible.

Bergamot is an amazing citrus fruit. I’m quite amazed that it is not used more often in cocktails. Juices of the fruit are incredibly sour, while oils of the peel have a strong fragrance reminiscent of earl grey tea and a rather bitter taste. This results in a complex taste profile of the fruit which has been ingeniously used in this cocktail.

Juniper forward London dry gin plays very well with sour and bitter notes of bergamot inside of the cocktail glass. I loved the addition of bergamot simple syrup instead of ordinary simple syrup. This way the attention is focused on the primary star of this cocktail - bergamot. (It is rather unusual that primary taste of the cocktail does not come from base spirit.)

Altogether, bergamot gin fizz is a fragrant, surprisingly light cocktail, a perfect refreshment for both body and soul. I highly recommend trying it, if you have a few bergamots at hand.
