Colour in Your Cheeks

COCKTAIL INGREDIENTS:
- 37,5 ml Fernet-Branca
- 15 ml Applejack
- 22,5 ml Fresh Lemon juice
- 22,5 ml Maple Syrup
- 22,5 ml Egg White

GARNISH:
- Apple Fan

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Dry shake to emulsify the egg whites (20-30 sec).
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with an apple fan.

Fernet-Branca is one of the most divisive amaro available on the market. Which is why I’m always looking for new recipes with this unusual liqueur.

In this particular cocktail the place of the base spirit is taken by Fernet with all of its bitter deep botanical notes. Applejack plays only a supporting, yet very important role. It softens up taste of the amaro making it a lot friendlier. Fresh zing of the lemon juice brightens up the cocktail adding an extra dimension. Subtle sweet notes of maple syrup help with the balance and brings together the very different flavours of the rest of the ingredients. Finally, egg whites provide that lovely smooth texture making drinking experience much more enjoyable.

All in all, Colour in Your Cheeks is a complex deep cocktail. Perhaps more suitable for late summer or autumn, but nonetheless it works great if you are looking for something warming and sophisticated.
