House of Payne

COCKTAIL INGREDIENTS:
- 3 Raspberries
- 45 ml London Dry Gin
- 30 ml Sloe Gin (Preferably Plymouth)
- 30 ml Campari

GARNISH:
- Skewered Raspberries

INSTRUCTIONS:
• Gently muddle raspberries in a mixing glass.
• Add the remaining ingredients.
• Add ice and stir until chilled (30-45 sec. or approx. 60 revolutions).
• Double strain into a cocktail glass over fresh ice.
• Garnish with skewered raspberries.

When it comes to modern cocktails, names of some bartenders are encountered more frequently than others. This is especially true when talking about Phil Ward, who has created too many modern classics to list here. So, this time I would like to focus on just one his creations – House of Payne, slightly unusual yet fantastically delicious cocktail.

First thing one notices, when picking up a glass of House of Payne, is that seductive ruby-red colour, followed by the subtle aroma and sophisticated flavour. Base ingredients of London dry gin and Campari, a combination loaned from a Negroni, is a great starting point. Dry juniper notes of the gin pair with bitter-sweet orange of the Campari defining the foundational taste of the cocktail. Addition of muddled raspberries is where things start to take a new turn. Sweetness and floral tones blend seamlessly with the rest of the ingredients. Sloe Gin plays with and develops this fruity theme even further, bringing a lot more complexity to the drink and helping with the balance.

House of Payne is a very imaginative and delicious riff on a negroni. If you are looking for a new complex, boozy and refreshing cocktail, this will fulfil that brief perfectly.
