Demerara Dry Float
COCKTAIL INGREDIENTS:
- 60 ml Lime Juice
- 1 barspoon Lemon Juice
- 45 ml Passion Fruit Syrup
- 7,5 ml Demerara Syrup
- 7,5 ml Maraschino Liqueur (Luxardo)
- 45 ml Plantation 5 Year Grand Reserve Rum
- 15 ml Plantation O.F.T.D Overproof Rum
GARNISH:
- 2 Lime Wheels
- Sprig of Mint
INSTRUCTIONS:
• Combine all of the ingredients except overproof rum in a cocktail shaker.
• Shake with crushed ice.
• Strain over fresh crushed ice into a double old-fashioned glass.
• Float the overproof rum on top or serve on the side.
• Garnish with a lime fan and a sprig of mint.

Full of rum, fruity, refreshing and slightly extravagant, everything tiki cocktails are about. Demerara Dry Float is a creation of the founder of the tiki movement, Don the Beachcomber.
Aged rum pairs well with passionfruit forming the base of the cocktail, which is supported by Maraschino liqueur and balanced by a good measure of lime juice. In the end floating 15 ml of overproof rum on top, ensures that this cocktail can take you on the journey and the cocktail will develop over time, by incorporating the remaining rum float. But the first stip… It will be unforgettable. A hit of overproof rum is almost overpowering in the beginning, only to be followed by the soothing fruity notes of passionfruit and lime. Cheers!
