Horn of the Bulls
COCKTAIL INGREDIENTS:
- 45 ml Blanco Tequila
- 15 ml Japanese Melon Liqueur (Midori)
- 22,5 ml Pineapple Juice
- 15 ml Cucumber Syrup
- 22,5 ml Heavy Cream
- 22,5 ml Egg White
- 1 pinch of Salt
- Soda Water (Chilled)
GARNISH:
- Cucumber Wheel
INSTRUCTIONS:
*Cucumber syrup:
Prepare simple syrup using 120 g of sugar and 120 g of water. While still hot add 6 peeled slices of cucumber (approx. 1,2 cm thick each). Allow to steep for about 10 minutes. Strain out the cucumber and store in the fridge for up to one week.
• Combine all of the ingredients except soda water in a cocktail shaker.
• Dry shake (without ice) to emulsify the egg whites.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Top up with soda water to raise the foam. (For better result you can make a hole with a straw to pour the soda water through, or pour it along the bar spoon in order not to ruin the foam.)
• Garnish with a cucumber wheel.

Horn of the Bulls is an incredibly surprising cocktail. Primarily because you do not often find blanco tequila and Midori combined with cucumber in a fizz style cocktail. Sounds like it should not work, but it does and also results in a fantastic cocktail.
Grassy vegetable notes of tequila combining with sweet melon notes of Midori is an interesting discovery. Seems like pairing Midori with clear spirit is probably the best way to utilize this sweet colourful liqueur. Adding a little bit of cucumber through infused simple syrup, brings some freshness to mix pairing great with tequila. Pineapple juice, takes the cocktail into a distinct tropical direction with a touch of fruitiness. Additionally, combined with heavy cream and egg whites it contributes to a foamy rich texture of the cocktail. Finally, a pinch of salt lets the flavours pop a little bit more while soda lengthens the cocktail and brings some classic fizziness to the mix.
Horn of the Bulls is probably the most unusual fizz I have ever tasted, nevertheless it is amazingly refreshing and delicious.
