Intro to Aperol is a delicious creation of Audrey Saunders (Pegu Club, New York) and it is a great way to introduce people to the world of Italian amari. Aperol is a particularly suitable for such a task, being the friendliest, in my opinion, of the bitter liqueurs. It bridges the gap between sweet neutral cocktails that everyone likes and other, more extravagant drinks utilizing the broad palette of amari.
Intro to Aperol is a lovely balanced cocktail. It has it all: sweet, sour, strong and, of course, bitter components. Bitter sweet orange notes of the Aperol are the stars of the cocktail. Combining with dry juniper of the gin and refreshing sourness of lemon. A splash of simple syrup for the balance and a dash of Angostura bitters finishes the cocktail. Bitters work especially well, blending its aromatic notes with Aperol, almost pushing the base flavors of the drink into the foreground even more.
Fantastic choice not only for beginner drinkers of amaro, but also seasoned experts.
