COCKTAIL INGREDIENTS:
- 45 ml Pisco
- 45 ml Limelon Juice
- 15/20 ml Fresh Lime Juice
- 15 ml Simple Syrup
- 22,5 ml Egg White
- 30 ml Chilled Soda Water

GARNISH:
- Limelon spear.

INSTRUCTIONS:
• Combine all of the ingredients except soda water in a cocktail shaker.
• Dry shake (without ice) to emulsify the egg whites.
• Add one or two ice cubes and shake until fully dissolved.
• Pour the contents into a chilled cocktail glass and let it set for a minute or two in the fridge, until the foam fully forms.
• Top up with soda water to raise the foam. (For better result you can make hole with a straw to pour the soda water through or pour it along the bar spoon in order not to ruin the foam.)
• Garnish with a limelon spear.

 

Last summer I have tasted limelon for the first time and I could not stop thinking about how it could be worked into a cocktail. Recently, I had a chance to get my hands on a whole new fresh liemlon for such an experiment. Result of which was an unusual yet delicious fizz cocktail.

I have started with a rather traditional fizz template combining gin, fruit juices, simple syrup, egg whites and soda water. The only issue was to work out the ratios of the ingredients, especially the necessary amount of limelon juice. Cocktail made according to the traditional template was tasty, but somehow a little boring, lacking something special. I tried playing around with different ratios, additional syrups, but eventually change of the base spirit was the answer. I swapped gin for pisco and all fell into place. Grape notes of the spirit pair quite well with the sweet, fruity floral notes of the limelon. Addition of lime juice, brings the sour component of the limelon to the foreground with simple syrup providing some balance. Lengthened with soda water and topped with a thick layer of tasty foam Limelon Fizz is ready to be served.
