Kiwi Mojito

COCKTAIL INGREDIENTS:
- 60 ml White Rum
- 30 ml Fresh Lime Juice
- 30 ml Simple Syrup
- 60 ml Soda Water (Chilled)
- 8-10 Mint Leaves
- 1-2 Kiwis Cut Into Wheels
(depending on size of the fruit you might need one sometimes two.)

GARNISH:
- Sprig of Mint
- Kiwi Wheel

INSTRUCTIONS:
• Add mint, kiwi pieces and simple syrup to a cocktail glass.
(Depending on the sweetness/sourness of the fruit you might need to adjust the amount of simple syrup.)
• Muddle the fruit and mint
(Be careful not to overmuddle the mint. Alternatively muddle the fruit first and then add mint).
• Add rum, lime juice and crushed ice.
• Stir to combine the ingredients and lift the mint to the top.
• Add soda water and top with more crushed ice.
• Garnish with a sprig of mint and a kiwi wheel.

 

Cocktail author: I am pretty sure there are many people who already had this idea before me, but it is very difficult to figure out who had it first. So, I will just admit that idea isn’t mine, but I do not know whom should I give the credit to.

After my experiment with honeydew melon mojito, I decided to give it another try, this time using kiwi as fruity addition.

 For me, the idea of kiwis in a mojito style drink seemed like a natural progression from my previous experiment with the melon. Fortunately, these fruits fit well into a standard mojito specs. Sweet with a hint of tartness, kiwis blended seamlessly with lime juice, mint as well as honey, sugar, vanilla notes of white rum. All of this added up to a tasty refreshing drink, just as mojito should be.

 Although, I have noticed that additional sourness of kiwis might need some rebalancing. Depending on the taste of individual fruit you might need to increase the amount of simple syrup, so keep tasting your ingredients.

 I really liked experimenting with the mojito template by adding little tweaks and twists. Once weather gets a little bit warmer, I will sure return to it with new ideas to try out.
