Manolito’s Swampwater

COCKTAIL INGREDIENTS:
- 75 ml Green Chartreuse
- 22,5 ml Pineapple Juice
- 15 ml Fresh Lime Juice
- 2 Large Basil Leaves
- 425 g Ice
- 30 ml Dry Rum

GARNISH:
- Sprig of Mint
- Dehydrated Grapefruit

INSTRUCTIONS:
• Combine all of the ingredients except rum in a blender.
• Blend until smooth, slushy consistency.
• Pour into a cocktail glass.
• Float rum on top.
• Garnish with a sprig of mint and a dehydrated grapefruit slice.

The moment I saw this cocktail it immediately attracted my attention. Mainly because I have never seen so much green Chartreuse in a single drink. I was not sure how good the cocktail was, but it pretty much guaranteed a fun tasting. Surprisingly, final result was much subtler and more delicious than expected. Manolito’s team have really reinvented The Swampwater cocktail.

First and foremost, when you lift the glass you are greeted by the fresh fragrance of mint, followed by the distinct sweet herbal notes of green Chartreuse. If any cocktail deserved a label herbaceous, then this is it. There is no doubt which ingredient is the star of the show. Pineapple and lime juice are mainly here to provide some balance and increase the complexity of flavor. An addition of basil blends very well with other herbal notes of the cocktail, giving that extra touch of complexity. It is not in the forefront, but always lingering in the background. Dry rum float is a nice touch. It is playing around with the other ingredients taking the cocktail into a tiki like direction.

All in all, I highly recommend trying this cocktail, especially if you have some green Chartreuse lying around.
