Swiss Kiss

COCKTAIL INGREDIENTS:
- 45 ml Gin
- 15 ml Génépy
- 22,5 ml Fresh Lemon Juice
- 15 ml Simple Syrup
- 1 dash Peychaud’s bitters
- 2,5 ml Absinthe (Half of bar spoon)

GARNISH:
- Sprig of Mint
- Dehydrated Lemon Wheel

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add ice and shake until chilled.
• Strain into a cocktail glass over one large ice cube.
• Float the absinthe on top (or use atomizer).
• Garnish with a dehydrated lemon wheel and a sprig of mint.

Recently I was gifted a bottle of génépy. An alpine digestif I was not aware of before and it did not disappoint. After sneaking a taste, I immediately set off looking for recipes with this amazing liqueur and I came across Swiss Kiss. It became the very first cocktail with génépy I have tasted and it was a revelation.

I did not have the recommended Letherbee gin, so I substituted it with London Dry style. It worked fine, but I imagine a new western style gin, with stronger herbal notes would work wonders here and add an extra layer of complexity. (So, if you have that kind of gin lying around, I would strongly suggest trying it in this cocktail.) The way juniper combines with gentle herbal notes of génépy it creates a sophisticated fusion not many cocktails can achieve. Bolstered by the addition of anise and fennel of absinthe and Peychaud’s bitters which binds it all together. Addition of lemon juice, takes the cocktail into a sour direction introducing an element of freshness while simple syrup helps with the balance. Balance is the key in this cocktail. Every subtle note of different ingredients is noticeable and present, yet combined together create a completely new experience. A truly great cocktail!
