Pink Lady

COCKTAIL INGREDIENTS:
- 45 ml Gin
- 15 ml Applejack
- 30 ml Fresh Lemon Juice
- 15 ml Grenadine
- 22,5 ml Egg White

GARNISH:
- Lemon Wheel
- Cherry

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Dry shake (without ice) to emulsify the egg whites.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with a lemon wheel and a cherry.

To me, Pink Lady is a sort of middle ground between White Lady and Clover Club. It is light, tasty, easy to drink cocktail, which apparently gained the reputation of being “girly” between 1930’s and 1950’s. Nevertheless, it is a great prohibition era drink to try on your journey through the world of cocktails.

Pink Lady is a rather simple cocktail, that essentially starts as a gin sour with an addition of applejack or apple brandy bringing notes of sweet apples and a slight hint of charred wood. Most sweetness is provided by the grenadine along with some deep fruity flavors and distinctive color, that nicely balances the sour component. Although, depending on where you get your grenadine, you might need to experiment a bit to find the right balance for you. (In my opinion, a lot of grenadines on the market are a little bit too sweet, missing the signature tang of the pomegranate.) Finally, adding a layer of thick egg white foam on top brings some texture to mix for a satisfying finish.
