Ramos Gin Fizz

COCKTAIL INGREDIENTS:
- 60 ml Old Tom Gin
(London dry will also do the trick)
- 15 ml Lime Juice
- 15 ml Lemon Juice
- 30 ml Simple Syrup
- 45 ml Heavy Cream
- 30 ml Egg White
- 30-60 ml Soda Water
- Dash of orange flower water

GARNISH:
- Orange Twist

INSTRUCTIONS:
• Pre-cool your cocktail shaker.
• Dry shake (without ice) cream and egg whites.
• Add lime and lemon juice, gin, syrup, orange flower water and a few ice cubes (not too many, you want the ice to melt completely while shaking).
• Shake for about 3 minutes, make sure ice is fully dissolved.
• Pour into a chilled cocktail glass and let it rest in the fridge for 3-5 minutes.
• Gently top the cocktail with soda water (make a small hole with the drinking straw by the side of the glass, so that soda gets down into the cocktail without ruining the foam).
• Garnish with an orange twist.

A delightful, creamy and fragrant cocktail that does not disappoint. However, it might require a few attempts to master the foam, and the build process is quite long and complicated, but believe me, it is worth all the effort. I have prepared this cocktail many times and will make it again and again.
