Camparinha

COCKTAIL INGREDIENTS:
- 30 ml Cachaça
- 30 ml Campari
- 2 Teaspoons of Demerara Syrup
- 4 Kumquats (Halved)

GARNISH:
- Dehydrated Lime Wheel
- Kumquat

INSTRUCTIONS:
• Cut the kumquats in half and add it to a cocktail glass.
• Cover the kumquats with sugar and muddle.
• Add the remaining ingredients.
• Add crushed ice and stir well.
• Top with more crushed ice.
• Garnish with a dehydrated lime wheel and a kumquat.

Last recipe of the kumquat series is a twist on the famous Brazilian caipirinha. It is a riff that takes this beloved cocktail into a completely new and bitter-sweet direction by introducing Campari into the mix.

Main or co-main spirit of the cocktail naturally remains to be cachaça with its signature grassy and funky notes reminiscent of rhum agricole. Campari brings that all familiar bitter-sweet orange notes which are then paired brilliantly with some fresh kumquats creating a delicious citrus fusion. Kumquats with their sweet skin and slightly tart juices blend seamlessly with the rest of the ingredients. Final addition of demerara sugar, just like in its predecessor, brings a touch of supplementary sweetness and the rich molasses flavour, balancing out the cocktail. Although in this case it tips the balance to the sweeter direction. All of the ingredients are of rather intense and unique falvour, so dilution is extremely important. Therefore, crushed ice was a natural choice taming the notes of the individual ingredients and lengthening the cocktail.

Camparinha is a quite unique cocktail, a sort of cross between caipirinha and negroni, so it is definitely intriguing and more importantly tasty.
