Brunelle Frappé

COCKTAIL INGREDIENTS:
- 45 ml Fresh Lemon Juice
- 22,5 ml Absinthe
- 22,5 ml Simple Syrup

GARNISH:
- Sprig of Mint
- Star Anise

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add a little scoop of crushed ice and shake briefly.
• Pour the contents into a cocktail glass and top with more crushed ice.
• Swizzle briefly and top with more crushed ice.
• Garnish with a sprig of mint and a star anise.

For a while absinthe cocktails were the ones for the history books, until Laura Maddox and the team at Small Victory wiped the dust of the recipe of The Brunelle from the Savoy Cocktail Book and brought it back to life as a Frappe.

Main flavour of the cocktail, and I truly mean main, is anise of the absinthe. There is no doubt that it is the star of the show with its pure flavour ruling the overall profile of the drink. Being such a strong and dominating taste it has to be balanced by an enormous dose of lemon. I do not think I ever saw such an amount of lemon juice in a single cocktail until now, but it is essential to give it enough tart freshness keeping the sweet absinthe in check. Further addition of simple syrup balances the cocktail out and keeps it deliciously palatable. Finishing touch of star anise and a sprig of mint expands the aromatic dimension of the cocktail for a well-rounded drinking experience.

Brunelle Frappe is an intriguing cocktail on paper and in reality, seemingly simple, but at the same time very inventive. So, grab a bottle of absinthe and try it out at the first opportunity.
