Capo Sour

COCKTAIL INGREDIENTS:
- 50 ml Vecchio Amaro del Capo
(I used Red Hot edition for extra spice)
- 15 ml Simple Syrup
- 30 ml Fresh Lemon Juice
- 22,5 ml Egg White

GARNISH:
- Lemon Twist

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Dry shake to emulsify the egg whites.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Express lemon peel oils over the top.
• Garnish with a lemon twist.

Few other cocktail templates are as universal as the humble sour. It only takes base spirit, citrus juice and a sweetener to make a delicious cocktail. That is why, when trying a new and unfamiliar spirit I tend to try it out as a sour. Vecchio Amaro del Capo Red Hot edition is no exception.

 

Base of the cocktail is of course Vecchio Amaro del Capo with its intense bitter-sweet, floral and herbal notes capturing the spirit of Calabria and then supplementing it with the spiciness of the red-hot chilli. Rest of the ingredients are pretty straight forward. Lemon juice providing the delicious tartness pairing well with the Italian amaro. Simple syrup helping to balance out the cocktail and emphasize individual notes of the base spirit. Finally, a touch of egg white for the all-important texture. Original recipe calls for only 10 ml of egg white, but after trying that, I prefer to stick with the 22,5 ml dosage, which I find to provide the best layer of firm and velvety foam.
All in all, Capo Sour is a straightforward, no nonsense sour cocktail with an unusual spicy twist, if you use Red Hot edition of the Amaro. Try it out, if you ever have a chance to pick up a bottle of Amaro del Capo.
