Cocktail author: recipe adapted from Charles H. Baker’s “The Gentleman’s Companion Vol. II”.

Daisy de Santiago is a seemingly uncomplicated cocktail with a certain tropical elegance radiating off of this simplicity.

White rum as a base spirit, naturally, brings notes of sugar cane, vanilla and tropical fruits. For this particular cocktail I would recommend a bit more complex white rum, not the full funkiness of Jamaican rum, but something like Plantation 3 star should work very nicely. That delicious complexity of rum is then further expanded on by the herbs and spices of yellow chartreuse. Traditional pairing of lime juice and rum works wonderfully as always, by bringing in lovely tropical tartness with a small addition of simple syrup helping with the balance. Mint garnish provides the finishing touch of fresh and cool aroma, fusing well with other tropical tones.

Daisy de Santiago looks like a simple cocktail on paper, but it surely does not disappoint. Drink is ready to offer you loads of flavour and complexity. Great for cocktail parties or just to relax with after a long and difficult day.
