Watermelon Margarita

COCKTAIL INGREDIENTS:
- 60 ml Mezcal
- 22,5 ml Acidulated Watermelon Juice
- 22,5 ml Triple Sec
- 1 Dash of Agave Nectar
- 3 Drops of 20% Saline Solution

GARNISH:
- Lime Twist
- Watermelon Balls

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with a lime twist and some watermelon balls.

Margarita riffs are pretty ubiquitous on the internet, so encountering something truly surprising does not happen very often.

Watermelon Margarita as a concept has been around for a while, but this particular riff with acid adjusted watermelon juice and a few drops of saline solution is simply remarkable. Base spirit of the cocktail is not the traditional tequila, but its close cousin – Mezcal. It brings a lot of complex vegetal smoky notes taking the cocktail in a familiar yet slightly unusual direction right from the start. Addition of orange of triple sec follows the traditional cocktail build. Where things start getting interesting is acid adjusted watermelon juice. Not only it provides a refreshing tart kick, but also a distinct light fruitiness pairing seamlessly with those smoky tones of the base spirit. A small dash of agave nectar with a few drops of saline solution helps to finely balance and tune the cocktail letting the various ingredients shine through.

Watermelon Margarita is a deliciously smoky and fruity take on the tequila classic. It requires a little effort to make acid adjusted watermelon juice, but it is absolutely worth it. I highly recommend giving it a try if you have a chance.
