Ned King’s Gem

COCKTAIL INGREDIENTS:
- 30 ml Cognac
- 30 ml Aged Jamaican Rum
- 22,5 ml Fresh Lime Juice
- 15 ml Pineapple Gum Syrup
- 1 Dash of Angostura Bitters

GARNISH:
- Fresh Grated Cinnamon
- Pineapple Spears
- Lime Twist

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with some freshly grated cinnamon, pineapple spears and a lime twist.

Cognac and tropical tiki’esque cocktails do not meet very often. However, in this Ned King’s reinterpretation of the Gem (cocktail recipe going back to the 1890s and predating the tiki movement by almost half a century) cognac and aged rum blends seamlessly together into a scrumptious cocktail.

Cocktail base is split between oaky cognac with hints of blackcurrant and signature sweet overripe banana notes of aged Jamaican rum. Pineapple gum syrup brings vibrant fruitiness, well-balanced between sweet and tart as well as imparting rich viscous mouthfeel to the drink. Addition of lime juice provides the balance with flavour of tart citrus in a true tiki fashion. Finally, a touch of Angostura bitters seasons the cocktail with tropical spices drawing on the notes of syrup and especially rum.

All in all, Ned King’s Gem is very aptly named cocktail, a true gem: complex, delicious and ready to provide an unforgettable drinking experience.
