Cocktail author: Sam Ross.
Sam Ross has created some of the best and well-known modern cocktails. Paper Plane is often the one that tops this list. It is a fantastically well-built cocktail: pretty straight forward recipe with all equal parts ingredients, yet delicious, complex and refreshing.
It is quite difficult to pick which ingredient forms the base of the cocktail, bourbon or amaro Nonino. Both bring strong and noticeable flavours, that together form something unique, especially when supported by Aperol and lemon juice. Surprisingly two amaro’s in this cocktail does not result in an overwhelming bitter taste. Only a gentle aftertaste of bitterness is present which helps to emphasize the other sweeter botanical notes of the ingredients. Bourbon lends some oaky peppery notes, but without overpowering it all, more like a spice that lingers in the background. And of course, lemon juice, bring a touch of tartness helping to balance out the cocktail.
Paper Plane is an incredible cocktail, for me it is a lesson in balance, complexity and simplicity. This is a must try for any cocktail enthusiast.
