Rebujito

COCKTAIL INGREDIENTS:
- 2 Mint Leaves
- 15 ml Simple Syrup
- 60 ml Fino Sherry
- 15 ml Fresh Lemon Juice
- 15 ml Fresh Lime Juice
- 60 ml Chilled Soda Water

GARNISH:
- Lemon and Lime Twists
- Sprig of Mint
- Dehydrated Lime Wheel

INSTRUCTIONS:
• Add mint and simple syrup to a cocktail shaker.
• Gently muddle the mint.
• Add sherry and the fruit juices.
• Add ice and shake until chilled.
• Double strain into a cocktail glass over fresh ice.
• Top with chilled soda.
• Garnish with lemon and lime twists, sprig of mint and a dehydrated lime wheel.

I know the summer is over, but I cannot resist posting this summery discovery, that is simply oozing the Andalusian sun.

Traditionally Rebujitos are cocktails where sherry is mixed with soft drinks, often Sprite. This recipe takes this template and adapts it to the modern cocktail world by utilizing fresh ingredients.

Base of the cocktail is formed by the fino sherry. The driest of sherries brings gentle acidity and notes of delicate Mediterranean herbs. Herbaceousness is then further reinforced by fresh and cooling mint. Soft drink element has been replaced by the tartness of lemons and limes, while balanced by a touch of simple syrup. Soda water lengthens the drink and livens it up by introducing effervescence. Garnishing the cocktail with mint, lemon and lime twists expands additional fragrant dimension fully rounding up the cocktail.

Rebujito is a fantastically delicious and refreshing cocktail. Put that in your books for next summer, when looking for invigorating cocktail.
