White Port and Tonic

COCKTAIL INGREDIENTS:
- 60 ml White Port
- 120 ml Tonic Water (Chilled)

GARNISH:
- Lime Wedge
- Finger Lime
- Sprig of Mint

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail glass.
• Add ice and give it a brief stir to combine.
• Garnish with a lime wedge, finger lime and a sprig of mint.

When thinking about the best pairings for tonic, immediately London dry gin comes to mind. Fortunately, it is not the only pairing. I will be honest, I never thought of pairing port wine with tonic, but upon reading about this classic Portuguese paring I had to give it a go and find out for myself.

As the name gives it away, the base of the cocktail is formed by floral and fruity white port with notes of stone fruit, vanilla and slight hint of caramel. Tonic lengthens the port and brings additional earthy, aromatic, bitter-sweet qualities to the mix. It is fair to experiment with the varieties of tonics out there. I quite like Fever Tree Mediterranean Tonic because of its floral tones pairing fantastically well with port, supporting and reinforcing each other. In addition to that I love freshly cracked finger lime garnish here. It brings zesty citrusy aroma to the mix, subtly increasing the overall cocktail complexity without affecting the actual flavour profile.

All in all, White Port and Tonic is an incredibly simple, but tasty and refreshing drink with room enough to experiment. Great drink to try if you are feeling tired of the classic G&T.
