Lime Cordial

INGREDIENTS:
- 150 g Lime Peel
- 500 g Sugar
- 500 ml Lime Juice

PREPARATION:

• Wash your limes thoroughly with a brush and dry them off.
• Peel the lime removing as little of the underlying white pif as possible.
• In a non-ractive container put the lime peels together with sugar and leave it for 24 h.
• Juice the limes and pour the juice over the peels and oleo saccharum you now have in a container.
• Let it steep in a refrigerator for another 24 h.
• Strain the peels out and pour the cordial into a sterilized container.

 

A really great ingredient, that will breathe another life into your cocktails and lemonades.

I have tweaked the recipe very slightly to suit my needs, but essentially it is the recipe by Toby Cecchini. An original recipe can be found in the source material.

A small note: you might want to use a very fine almost coffee filtering method to remove as much of residual lime peel sediment as possible. In the first batch I have made this sediment formed a foam like layer on the top, which can get moldy, if stored in the fridge for a long time. Which is a shame, because cordial itself has a very long shelf life, but if it spends a lot of time in a moldy container it will get an unwanted taste note.
