Admiral Schley High Ball

COCKTAIL INGREDIENTS:
- 60 ml Irish Whiskey
- 15 ml White Dessert Wine
(I used White Port)
- 22,5 ml Pineapple Syrup
- 22,5 ml Fresh Lemon Juice
- Soda Water (Chilled)

GARNISH:
- Lemon Twist
- Pineapple Spears
- Dehydrated Bergamot Wheel

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker, except soda water.
• Add ice and shake until chilled.
• Strain into a cocktail glass over fresh ice.
• Top with chilled soda water.
• Garnish with a lemon twist, pineapple spears and a dehydrated bergamot wheel.

It is very rare to come across a recipe blending whiskey with some tropical notes and tough this high ball recipe is not the full-on tiki, it is a step in the right direction, combining ingredients into a deliciously refreshing and surprisingly light cocktail.

Base spirit of the cocktail is Irish whiskey with its mellower taste profile (if compared with scotch) and notes of vanilla, oak and caramel. For the dessert wine I chose to use white port, which I had laying around. It takes the cocktail into slightly more tiki direction, riffing off the recipes like Sailor’s Swizzle and brings notes of honey, vanilla as well as subtle hint of oak pairing well with the base spirit. Addition of pineapple syrup builds on with sweet and fruity tropical flavours and a touch of lemon juice providing balance and some refreshing tartness. I chose to add a careful dose (approx. 45ml) of soda water to help further dilute the sweetness and introduce a bit of effervescence. Finishing touches of dehydrated fruit and lemon twist elevates the cocktail’s aromatic dimension nicely finishing it up.

All in all, Admiral Schley High Ball is a delightful discovery perfectly suited for the summer. I highly recommend trying it. Especially if you are a whiskey lover and can sometimes feel left out when surrounded by light and fruity summer drinks.
