Idea for this cocktail has been on my mind for quite a while and I was finally able to bring it into the reality.

I based my idea around gin and sparkling wine made in Denmark. Naturally, the first cocktail that comes to mind when thinking about gin and sparkling wine is French 75. So, I took it as an inspiration and decided to make a riff on this, highly popular, cocktail. As the main spirit I chose light and fragrant gin from Njord distillery – Mild Wilderness, with its citrus and rose hip notes forming a solid base for the drink. To reinforce these tastes, I added one of my favourites - rose hip syrup. The sweetness of syrup is balanced by the combination of lemon juice sourness and semi-dry rhubarb sparkling wine, which pairs well with those rose hip notes. All these flavours combined moves the cocktail further away from the palette of France and much closer to the north.
