Ruby

COCKTAIL INGREDIENTS:
- 45 ml Vodka
- 22,5 ml Elderflower Liqueur
- 15 ml Aperol
- 22,5 ml Fresh Lemon Juice
- 22,5 ml Fresh Ruby Red Grapefruit Juice
- 22,5 ml Egg White
- Grapefruit Peel Oil

GARNISH:
- Grapefruit Twist

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Dry shake to emulsify the egg whites (20-30 sec).
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Express grapefruit peel oils over the cocktail.
• Garnish with a grapefruit twist.

Ruby is a delightfully fruity creation by Tony Abou-Ganim. In my opinion, it is an all-year-round cocktail, with certain qualities making it perfect for the summer. Especially if one is looking for flavour packed drink.

Choice of the neutral base spirit allows the drink to focus on the various fruit notes, turning it into a remarkably refreshing cocktail, that still maintains a serious kick. Sweet notes of elderflower bring a soft floral element to the drink, being paired with a hefty dose of citrus notes. Combination of bitter-sweet orange of Aperol and grapefruit juice is a perfect match, with just a touch of balance being brought by the lemon juice. Fantastic example of how to combine different citrus fruits to achieve a great result. Egg white contributes a lovely foamy, creamy texture, that is finished by the fragrant grapefruit peel oils you will encounter instantly. A truly great cocktail.
