Set the New Year on Fire

COCKTAIL INGREDIENTS:
- 6 Mint Leaves
- 22,5 ml Fresh Lime Juice
- 15 ml Simple Syrup
- 60 ml Single Malt Scotch
- 15 ml Campari
- 15 ml Talisker Single Malt Scotch
- 10-15 ml Plantation O.F.T.D. Overproof Rum

GARNISH:
- Flaming Lime Shell
- Sprig of Mint

INSTRUCTIONS:
• Combine mint leaves, lime juice and simple syrup in a Collins glass.
• Gently muddle the mint.
• Add scotch and fill the glass with crushed ice.
• Float Campari on top and add more crushed ice if needed.
• Take a spent half of lime and fill it with overproof rum for flaming garnish.
• Garnish with a sprig of mint and set the rum on fire.

It seems like this cocktail is taking inspiration from mojito, a sort of supercharged version. And it tastes amazing.
I have twisted the recipe a bit by introducing a 15 ml of Talisker single malt, with its sweet smoky notes and it did not disappoint. Giving cocktail a bit more complexity by playing with bitter taste of Campari. However, if you use a very expensive bottle of single malt as your main spirit, you might want to stick with the original recipe in order to keep flavor of your single malt more pronounced.
