Three Dots and a Dash

COCKTAIL INGREDIENTS:
- 45 ml AOC Martinique Rhum Agricole Vieux
- 15 ml Blended Aged Rum
- 7,5 ml Allspice Dram
- 7,5 ml Velvet Falernum
- 15 ml Honey Syrup
- 15 ml Fresh Orange Juice
- 15 ml Fresh Lime Juice
- 1 Dash of Angostura Bitters

GARNISH:
- Pineapple Spears
- 3 Cherries
- Pineapple chunk (Cut into a long rectangle - a dash)

INSTRUCTIONS:
• Combine all of the ingredients in a cocktail shaker.
• Add ice and give it a brief shake to combine the ingredients.
• Strain into a cocktail glass over fresh crushed ice.
• Garnish with pineapple spears, three skewered cherries and a pineapple chunk.

Don the Beachcomber not only started the tiki cocktail movement, but also created some of the best recipes that are still available and enjoyed today. Three Dots and a Dash is just one of many delicious Don’s creations. This particular drink dates back to the years of WW2, and the name of the cocktail stands for the letter V written in Morse code, V for “Victory”.

Cocktail profile is quite complex, not unusual given the long list of ingredients. Aged Rhum Agricole lends to the cocktail its grassy taste tempered by woody notes and is paired well with some sweet molasses flavours of blended aged rum. Additions of Velvet Falernum and Allspice Dram brings many different tropical spices and flavours to the mix, leveling the cocktail up and increasing its’ complexity tenfold. A blend of lime and orange juice introduces the sour components and lengthens the cocktail, with a touch of honey syrup providing some balance.

Overall, Three Dots and a Dash is a cocktail larger than the sum of its parts. There are so many different ingredients and spice notes blended together that it truly forms something new and different. A lovely cocktail if you are looking for a momentary escape to a Caribbean Island.
