White Rum Smash is a fun, light, floral cocktail, perhaps more suitable for hot summer days, but just as tasty in the middle of winter. With a glass full of this rum goodness in your hand you can almost feel the sunshine on your face.

Base of this cocktail is formed by the white rum and its vanilla, sugar and honey notes. While the liqueur supplements smooth rum with a sweet elderflower taste. “Bartender’s Ketchup” aka. St. Germain is quite pronounced in this cocktail, providing a distinct floral finish. Everything is balanced by a few wedges of muddled lemon. By muddling the lemons, you get not only sourness of the juice, but also the aromatic oils from the skin as well as some bitterness of the pith. I prefer to strain out the lemons, to prevent additional bitterness from the pith infusing into the cocktail while drinking, but you are welcome to just dump the contents of the shaker into the glass if you want to skip the extra step. Top the cocktail with some effervescent tonic and enjoy. (This time I used a touch of Mediterranean tonic, its lemon and rosemary notes worked very well in this cocktail.)
