My last cocktail in this series of hot toddy style cocktails: Bucky.

For this cocktail I decided to explore a combination of sea buckthorns and Jamaican rum. A flavour pairing I came across completely accidentally, yet it works very well together. Caramel, molasses and banana notes of the funky Jamaican rum lays a solid foundation to start building on and is highly noticeable throughout the cocktail. Sea Buckthorn Tea concentrate brings a lot of fruity, sweet and sour flavours to the mix and playfully blend with the rum. Touch of lemon juice reinforces the tartness of the tea concentrate with an addition of acacia honey balancing the whole cocktail out with its sweet and floral notes. Top that with some hot water to dilute the bold flavours and give you that comforting warming feeling.

Bucky is an unusual fusion of tropical Caribbean and northern European tastes, but in this cold and dark time of the year it will envelope you as a warm comforting hug.
