Dublin Honey
COCKTAIL INGREDIENTS:
- 150 ml Guinness
- 2 Scoops of Vanilla Ice Cream
- Drizzle of Honey
- 30 ml Chocolate Syrup
- 15 ml Tawny Port
GARNISH:
- Grated Chocolate
- Chocolate Swirl Coated Glass
INSTRUCTIONS:
• Add some chocolate swirls to the glass and freeze the glass for chocolate to harden.
• Add 60 ml of Guinness to the glass.
• Add ice cream, drizzle it with honey, then add chocolate syrup.
• Stir to combine.
• Add the remaining 90 ml of Guinness and top with tawny port.
• Garnish with freshly grated dark chocolate.

What better cocktail to celebrate the Christmas with than a sweet, creamy and indulgent one – like a true grown-up milkshake Dublin Honey. On paper the recipe might seem a little strange, but in reality, it works surprisingly well. Honestly, it worked much better than I could ever imagine.
Base of the cocktail is a quite untraditional - Guinness with sweet fruitiness, notes of cacao and coffee. These notes are then further reinforced by decadent and rich chocolate syrup. I chose to make it from scratch with a lot of bitter dark chocolate and just a hint of cream. The bitter dark flavour of the chocolate helps to balance out the sweet nature of the cocktail. Vanilla ice cream drizzled with honey gives the drink thick creamy texture which combined with the beer results in a fizz like impression. Finally, tawny port works like a cherry on the cake bolstering the fruitiness of the cocktail with syrup like vibes.
Dublin Honey is a remarkably delicious cocktail blending ingredients not often seen in the same glass and yet it works. Absolutely worth a try.
