Pineapple Rum Punch

COCKTAIL INGREDIENTS:
- 60 ml Pineapple Rum
- 50 ml Fresh Pineapple Juice
- 25 ml Fresh Lime Juice
- 20 ml Velvet Falernum
- 25 ml Pineapple Gum Syrup
- 2 Dashes of Pimento Bitters
- 50 ml Chilled Soda Water

GARNISH:
- Dehydrated Lime Wheel
- Sprig of Mint
- Pineapple Spears
- Star Anise

INSTRUCTIONS:
• Combine all of the ingredients except soda water in a cocktail shaker.
• Add ice and give it a brief shake.
• Strain over fresh crushed ice into a cocktail glass.
• Top with chilled soda water.
• Garnish with a dehydrated lime wheel, sprig of mint, pineapple spears and a star anise.

Continuing this week’s journey through the world of punches I’m introducing - Pineapple Rum Punch. Rum punches are the classic approach to this style of drink. Light fruity and refreshing with a tiki like vibe Pineapple Rum Punch is a perfect recipe for garden parties or large gatherings. However, if you prefer to sneak a taste, before committing to a full bowl, I once again reworked the recipe into a single serve cocktail.

Base note of this cocktail is clearly a pineapple, it appears in a few ingredients, so the cocktail is laden with it. (That said, if you are not a fan of pineapple, this drink might not be for you.) Base of the cocktail is formed by pineapple rum (preferably Plantation Stiggins’) with notes of grilled pineapple, peaches and rich demerara sugar. Further reinforcing this tropical fruit flavour is pineapple juice, balanced by the tartness of lime. Velvet Falernum increases the overall flavour complexity with notes of lime peel, allspice, cloves and other tropical spices. Pineapple gum syrup extends the fruity tone of the cocktail, while at the same time providing a richer, more viscous mouthfeel, greatly improving the drinking experience. Touch of pimento bitters, plays with the tropical allspice aromatics; while the last addition of soda water, lengthens the cocktail and introduces a slightly acidic effervescence.

All in all, Pineapple Rum Punch, might not be the most unusual, or dare I say it, the most original punch recipe out there, but it is incredibly delicious. If you are planning a large party for the summer, this might be the recipe for you.
