Winter Sour

COCKTAIL INGREDIENTS:
- Leaves of one small rosemary sprig
- 45 ml Clover Honey Syrup
- 30 ml Campari
- 45 ml Fresh Lemon Juice
(preferably Meyer lemon)
- 22,5 ml Egg Whites

GARNISH:
- Rosemary sprig

INSTRUCTIONS:
• Add rosemary leaves and honey syrup to a cocktail shaker.
• Muddle gently.
• Add the remaining ingredients.
• Dry shake to emulsify the egg whites.
• Add ice and shake until chilled.
• Double strain into a chilled cocktail glass.
• Garnish with a sprig of rosemary.

Spirit forward stirred cocktails are much more common this cold time of the year. Nonetheless, sometimes nothing can satisfy your cocktail cravings better than a sour style drink and Winter Sour offers a delicious low ABV alternative to those booze filled winter cocktails.

Flavour profile of this creation is a tasty blend of bitter-sweet and sour notes with foamy texture of the egg white. Primary taste is defined by the Campari and its signature bitter-sweet orange notes. Campari is paired with some floral clover honey and balanced by the refreshing tartness of lemon. Subtle hint of rosemary in the background adds some extra depth and sophistication to the cocktail with the decadent finish of the egg white foam. I also like to squeeze and discard a lemon twist, to add some fresh aroma and potentially camouflage smell of the egg white.

Winter Sour is a great holiday cocktail: tasty, full of flavour and you can have quite a few of these throughout the evening without getting overly drunk.
